The Best Dinner Rolls!

Whats better than butter? Bread! And what could be better than buttery bread? NOTHING!!

Todays recipe comes from Laura Vitale of Laurainthekitchen.com and it is the perfect recipe and is so easy and simple!

The original recipe does call for a standing mixer but I went for the old fashioned approach and use my hands which is really helpful if you haven't gone to the gym, you can get your bicep work out in.

To start off you need to heat up the butter and milk just till the butter is melted, not letting it overheat for when you add the yeast in. The mixture shouldn't get above 50c, using a thermometer would be useful.

Once the butter has melted sprinkle the yeast over the top and let it sit for about 5 minutes.

Once the yeast is smelling great just mix in flour, sugar, egg yolk and salt. If you're using an electric mixer make sure the setting is on low until all the ingredients are combined then increase the speed until the dough is smooth and pulls away from the sides of the bowl.

If you're using your hands knead, knead, knead.

When you're done kneading light grease another bowl with melted butter and place the dough inside and cover with melted butter so a crust doesn't form. Cover the bowl with cling wrap and leave it somewhere warm to rise, this should take about an hour and the dough should double in size.

After the hour is up dust your bench with a little flour and tip your dough out. Cut the dough into even pieces and mould into shapes. I personally like to roll the dough out and twist it into a knot, this is perfect to pull apart and eat.

Grease a baking dish with butter and put each piece of dough in the dish and butter the top so a crust doesn't develop and then cover the dough again and put in a warm spot to rise again for another hour.

Preheat the oven to 190c and once the dough has risen place them into the oven on a middle rack and let them bake for 20-25 minutes or till they're golden brown. Be careful not to overcook them and let the crust become too thick.

I always brush them with butter straight away and once the rolls have slightly cooled I open it up and brush with more butter so it's all melted.

You can add a few different things to the mix, one of my favourite is adding garlic powder and dried rosemary it goes perfectly with any Italian dish, especially lasagna. Add any different herbs and spices or toppings to yum them up.

2 1/4 Tsp Yeast or 1 Packet

1/3 Cup White Sugar

1Tsp Salt

1 Cup Milk

1/3 Cup Butter

3 Egg Yold

Butter to grease

1. In a saucepan add milk and butter and wait for the butter to melt, making sure it doesn't get over 50c. Once heated, at yeast to the mixture and let rest for 5 minutes.

2. In a bowl combine all other ingredients along with milk mixture. If using an electric mixer, have the setting on low and wait for the ingredients to combine then increase the speed to medium high until the the dough is smooth. Or if kneading by hand continue for 10 or so minutes.

3. Grease a bowl with butter or oil and place dough in and cover with cling wrap and put somewhere warm to rise for an hour or until doubled in size.

4. Once the dough has risen, put onto a lightly floured bench and cut into equal sized pieces and put into an oiled/buttered baking dish and let rise for another hour in a warm environment.

5. Preheat the oven to 190c and place onto middle rack for 20-25 minutes.

6. Once out of the oven brush with butter and enjoy!
